Ika Vakalolo (Fish in Coconut Cream)

A hearty homestyle family meal and widely regarded as Fijis national dish! 

Serves 4

Ingredients         

Method                                                                                     

  1. Heat oil in pot
  2. Lightly pan fry fish fillets until golden brown
  3. Place cabbage under fish in pot
  4. Finely slice onions and tomatoes into long strips and place on top of fish
  5. Gently pour your coconut milk into pot covering all the ingredients
  6. Add chillies and salt to taste
  7. Let simmer for a further 20 minutes on low heat
  8. Squeeze lemon just before serving
