Kinsale spicy Chorico Mussels

Here is a piquant seafood recipe recommended by Rob Kenny,  Chef at Kinsale Yacht Club.  It uses succulent, rope grown Oysterhaven mussles and other local produce to make a simple and delicious meal.

Ingredients:

Method:

  1. In a large pot melt the butter and gently fry the chorizo onion and garlic for 5mins on a medium heat.
  2. Turn heat up to full and add the wine.
  3. When reduced by half add the cream, season with salt and pepper and reduce again by half.
  4. Add the mussels and cover with a lid or clingfilm and cook till mussels are open.
  5. Serve with crusty white bread and the rest of the wine!
