Komiža pogača is an aromatic savoury dish that owes its name to the small town on the island of Vis, the charming Komiža located at the foot of the hill of Hum. Since this is a place with a long fishing tradition, it is no surprise that the local food of this place contains salted fish, which in fishing villages on the Croatian coast has been traditionally prepared.
The baked pogača is normally cut into cubes, and it is juicy and impressive because of the rich filling plus it is an excellent snack or even as a main meal. It is a winning combination of sweet-sour tomatoes and salty pieces of fish and is a great pleasure when made from original local ingredients. It goes very well with wine red wine or even beer, and a slice of filling Komiža pogača will rejuvenate you after a long day spent in the sun or after wandering the narrow streets of this little island town.

- Whole wheat flour
- Luke warm water
- Olive oil
Method for making Pastry:
- Dissolve yeast in warm water and leave to stand
- Mix a small amount of salt and sugar to the flour
- Add the mixture to the yeast
- Add a little olive oil and luke warm water
- Knead the soft dough for 15 minutes
- Leave to stand for 1 hour to rise
Ingredients for Filling:
- Cleaned sardines or tuna pieces
- Chopped Red onions
- Chopped Fresh or peeled tomatoes
- Chopped garlic
- Olive oil
Method for Filling:
- Fry the onions in olive oil until soft
- Add chopped tomatoes and simmer mixture to reduce
- Leave thick red sauce to cool
- Add the finely chopped fish
- Divide pastry into two and roll flat.
- Line a floured and warmed pastry dish
- Add the cooked filling ingredients
- Cover with the second sheet of pastry and soak edges with olive oil
- Bake in a medium oven until it turns brown
